chicken& rice burritos

this is the last thing I made, chicken and brown rice smothered burritos – pardon me if youdon’t see them rolled up in a tortilla as the lot was hungry chickenfilling#etcmesquite brown rice lettuce and tomatoe to top the green sauce and cheese.

oh man those look so good but I am horrible at making burritos so I usually just buy the frozen variety.
@SisterMae - I didn’t feel like it breakfast era time either but forced my hands to pull 8sheets of paper towel 6+ 2 put the strips of bacon on the six then fold over the 2 nuke the job andcomplete a club sandwich of sorts lettuce tomatomayo aplenty ham and bacon. – I know this stinks as it’s two plates but it’stwo easy thingstowash up after and you can be eating carb allowed sammich in 8-10 minutes if you’re as slow as me 7 ifyou’re on the ball
@godfatherofgreenbay - lord sire, I had old shells so even nuked warm mine broke folding/rolling …hence the I knew to smother them in advance
you can do this and cover the imperfection sin cheeseyed sauce.

Nice. Love making Mexican food at home. Any excuse to smother something in cheese or sour cream.
@sleekpunk - :) surehopeso, it brightens the house. this recipe: chicken filling 2 split breasts which areroughly a pound a piece – and have the one pound bag of brown rice or one cup cry – yields 4 -6 burritoes of which no one squawked about seconds – if you care to, you can half it.
chicken filling – 2 caps knorr caldo de tomate, stired into quart cups one cap each quart.
fry half onion diced in olive oil low and slow till there’s room to easily fry chicken – doing this for browning the skin mmm then pouring in soy 1/4 cup then the warm water stirred broth first listed, bring to boil reduce heat and simmer adding second cup -boil 1.5 – 2.25 hours till you’ve no resistance forkingthrough the breast bones and all, chicken floatsso flip theseover40 mins or so so all is cooked. remove from water, de skin, de bone, shred of dice – save some of the broth about 1/2 cup’s worth

rice – a cap of mequite seasoning, 1 cup dry brown, a dribble of olive oil, less than one teaspoon, 2 cups cold water, – rice cooker, or lidded pot . 35 ish mins to cook .. cold water and rice means it’s stickier, oil means it doesn’t stick to too much. – once rice is cooked transfer to oiled pan add a can of rotel stir such through,
chicken and rice fit the pan so add only a splash once or twice of the cooking liquid you saved to keep the fillings from burning yet warm… this is called holding and since it’s with salt water, you get to hold it 30 minutes at most.
since I can, I church key the green sauce cans – one small one is2-3 burritos, you know that triangle punch thing on bottle openers, quite a handy thing for speed sauce pouring. cheese atop this so a it’s tasty, b it’s not a splattering up the microwave. nuke smothered burrito til cheese is melted – add lettuce tomato on side- perhaps sour cream and or quac, this makes it just close to mexican restaurants –

I have to admit happierheathen’s new mortor and pestle and the guac he made was rockin looking yummy too. – my all time favorite is shredded beef, slow simmered all day fork it apart mmmmm,nowadays it’s no longer mexican bound but bbq sauced and bunned. but, I still use the porkroast of thesame method for tacos burritos
Awesome. I discovered the wonder that is the slow cooker last winter (Guinness Beef stew-look it up it’s an easy reciepe and amazing).
YUMMY for my tummy. Thank heavens I just eat. However, at present time I would be in serious trouble if I had one of those lovelies. Too much spice, Tomatoes would create problems and the chilies would have had me in a room where I really would prefer not to be considering I spend more time than I wish in there. TMI – DRAT!! Hopefully gall bladder surgery will get me right as rain and then maybe I can eat again. One can hope…They still look awesome…
